“À table” – a wine made to be shared over food. In the 15-year-old Chasan parcel there are a few Colombard vines. In the oldest parcels Ian has also started planting Verdejo, as some local varieties ripen too late.
 
Juicy, spicy and full of character, with enough structure to make it a very versatile table wine.

Region: Haut-Languedoc
Grape: Syrah, Chasan
Soil: transition between schist and clay-limestone, on an old riverbed with silt
Average Age of Vines: Syrah 30 years; Chasan 10, 15 and 30 years
Harvest: by hand, early September 2023
Winemaking: crushed and destemmed, 2 weeks maceration
Aging: aged in tank through the winter, bottled in May or June 2024
Fining: none
