Ian’s first pét-nat. The Colombard was not yet fully ripe and had around 6% potential alcohol, so it makes up only around 10% of the blend. The Colombard was green-harvested to preserve extra freshness and acidity.
 
A light, vibrant and energetic pét-nat with plenty of freshness.
