1. Brasserie Mosaïque – And All That I Can See is Just a Yellow Lemon Tree


A herbal, rich wild ale made with a blend of grains, orchard fruits and the Dattier de Saint Vallier grape. Aged for many months in clay amphora and finished in bottle. Herbal and lightly toasted aromas meet fresh apple and quince. The palate is structured yet bright, with gentle spice and a clean, refreshing finish.


2. Brasserie Mosaïque – Life is Like a Box of Chocolats… (0.75L)


A fruity, mineral wild ale fermented with peach blossom, gooseberry and birch bark. Aged in terracotta amphora and  oak barrels, giving subtle structure. Aromas of earthy strawberry lead to a focused, mineral palate with quiet depth and natural elegance.


3. Brasserie Mosaïque – Let the Sunshine In (Cider)


A naturally fermented cider from wild apples and Merlot grapes. Co-fermented in oak barrels before bottle ageing. Lightly sparkling, with notes of wild apple, berries and soft grape nuances. Fresh, slightly tannic and smooth, with a gentle natural mousse.
