Style: Wild ale with whole cluster Pinot maceration.
Ingredients: Pale, crystal pils, oat, rye; Baco – Old red Garden hybrid grape widely planted in Haut Loire region.
Yeasts: Wild yeasts from Pinot Noir.
Maturation: New oak & dame-jeanne.
Fermentation: 8 months main + 12 months bottle.

Aromas: Red fruits, earthy, vegetal.
Palate: Fruity, spicy, vegetal, with mineral complexity.
