A dry white wine (2 g/l residual sugar) that is partly macerated (50% for 4 days) and aged for 11 months on the fine lees in stainless steel. Aromas of white flowers and white peach lead to a gentle sparkle on the tongue, fresh acidity and a rounded, full-bodied palate with balance and length.
Region: Alsace, France (Wangen)
Grape variety: Auxerrois / 13% alcohol
Soil: Red sandstone, south-southeast facing slope at 260–280m altitude. Yields around 45 hl/ha.
Vinification: Hand-harvested in 20 kg boxes (16 September). Half of the grapes macerated for 4 days. Slow pneumatic pressing, spontaneous fermentation with indigenous yeasts. Aged 11 months on fine lees in stainless steel. Bottled unfiltered, without sulphur, fining, racking or chaptalisation. Slight sediment or cloudiness may appear in bottle.
Food pairing: Ideal with quiche Lorraine, charcuterie, white meat dishes, baeckeoffe, asparagus or as an aperitif.
Ageing potential: 5–8 years.
