The first barrel-aged Auxerrois from Gérard. The barrel has treated the Aux very well. Aromas of white peach, subtle floral notes and delicate nutty tones, with a slight oxidative edge adding complexity. On the palate, a generous and smooth texture, supported by fine acidity and a gentle sweetness from the residual sugar (2gr/l), bringing balance and softness.
Region: Alsace, France (Wangen)
Grape variety: Auxerrois / 14% alcohol
Soil: Red sandstone, south-southeast facing slope at 260–280m altitude. Yields around 45 hl/ha.
Vinification: Hand-harvested on 16 September in 20 kg crates. Slow pneumatic pressing. Spontaneous fermentation with indigenous yeasts. No clarification, no racking, no chaptalisation, no fining and no filtration. Fermentation and élevage took place in 500L oak demi-muids (5th use).
Food pairing: Quiche Lorraine, charcuterie, asparagus, hors d’oeuvres, white meats, baeckeoffe, sushi, sashimi and light Asian cuisine, or as an aperitif.
Ageing potential: 5–8 years.
